Chewy Granola Bars

My boys love granola bars! They are fast to grab in a hurry, great for snacks at school and to take on a hiking trip.  I go through so many boxes it’s amazing.

So lately I have been thinking about and trying out some new homemade recipes and wanted to share one of my creations with you…. Chewy Granola Bars

You will need the following…(don’t be afraid to add a little or more of each item)

2 1/2 cups of crispy rice cereal (I like the brown rice)

2 cups of old-fashioned oats

1/2 cup of raisins, dried cranberries (dried fruit of  your choice)

1 tablespoon of marmalade or any fruit spread of your choice

1/2 cup of honey

1/4 cup or less of brown sugar

1/2 – 3/4  cup of a nut butter (peanut, almond, etc)

1 tsp. vanilla

1/4 – 1/2  cup dark chocolate chips

In a large bowl combine cereal, oats, and dried fruit. Set aside. In (Microwave) or saucepan, combine brown sugar, honey and marmalade. Bring to a boil, stirring constantly.  Stir in nut butter and vanilla.  Blend well until smooth.  Pour over cereal mixture. Coat well. Add chocolate chips. Pour into an ungreased 9×13 pan.

Press very firmly until cereal mixture is flattened and really stuck together.  Cool and cut into bars. I wrap mine with wrap and place them in the refrigerator (they never last long) and/or you can freeze them.

Taken over by puppies….

I opened up my quilt room to the puppies the other day and they are sure loving it! I have always had a gate up and never allowed them in this part of the house.  It is really nice having my puppies join me when I’m quilting during the day.  

By the look of things, they don’t seem to mind either! :-)

Lunch Update…

Sorry, it has been so long since I have posted about school lunches.  To catch up here are three days worth :-)

First up, a yummy whole wheat wrap with turkey, cranberries and spinach along with some bunny fruit snacks, trail mix (almonds, peanuts, raisins, M+M’s) and some corn chips. (Granola bars for one of their snacks, they also usually have some pretzels and/or bunny crackers along with the granola bar)

Next day, something a bit different ~ some salsa with chips along with trail mix and cheese and whole wheat crackers.

To mix it up today, was a peanut butter and raspberry jelly sandwich on oatmeal bread. Along with some more bunny fruit snacks, trail mix and (J) added some animal crackers :-)

Baked Kale Chips

My first attempt at baked Kale Chips and it was a success!  I highly recommend these as a snack…

1 bunch of Kale

3 tsp of olive oil

Dash of seasoning of your choice (I used an onion and herb blend)

Pre-heat oven to 350 degrees. Wash and dry Kale with a towel. Use a knife or kitchen scissors to remove rib stem and cut Kale leaves into pieces.  Toss in bowl with olive oil and seasonings. Place on 2 large baking trays lined with parchment paper. Bake for 10 to 15 minutes or until edges are slightly browned (don’t over cook) and enjoy with humus or by themselves.

To use or not to use?

My dear husband surprised me a couple of weeks ago with these beautiful cutting boards ~ I love them so much I don’t want to use them, but he reassured me that it would be fine to use as much as I want!  Love That!

They sort of look like a mini quilt!

On the menu…

On the menu last night was delicious baked haddock with an almond crust and served with stuffed peppers.

(Love the color of the peppers)

I love it when we have left over brown rice. (I always cook extra :-) .  Add some Parmesan cheese, some lovely colored peppers and a few spices and it turns into a quick healthy side dish. (Bake together for 30 minutes)

 Yummy!
