Chewy Granola Bars

My boys love granola bars! They are fast to grab in a hurry, great for snacks at school and to take on a hiking trip.  I go through so many boxes it’s amazing.

So lately I have been thinking about and trying out some new homemade recipes and wanted to share one of my creations with you…. Chewy Granola Bars

You will need the following…(don’t be afraid to add a little or more of each item)

2 1/2 cups of crispy rice cereal (I like the brown rice)

2 cups of old-fashioned oats

1/2 cup of raisins, dried cranberries (dried fruit of  your choice)

1 tablespoon of marmalade or any fruit spread of your choice

1/2 cup of honey

1/4 cup or less of brown sugar

1/2 – 3/4  cup of a nut butter (peanut, almond, etc)

1 tsp. vanilla

1/4 – 1/2  cup dark chocolate chips

In a large bowl combine cereal, oats, and dried fruit. Set aside. In (Microwave) or saucepan, combine brown sugar, honey and marmalade. Bring to a boil, stirring constantly.  Stir in nut butter and vanilla.  Blend well until smooth.  Pour over cereal mixture. Coat well. Add chocolate chips. Pour into an ungreased 9×13 pan.

Press very firmly until cereal mixture is flattened and really stuck together.  Cool and cut into bars. I wrap mine with wrap and place them in the refrigerator (they never last long) and/or you can freeze them.

  1. Do you know how many calories are in each, by chance? :)

    • It’s hard to know exact, due to the amount of dried fruits I would use. But it safe to say about 150 calories. Sorry I can’t be exact…. Thanks for visiting!

    They look yummy and don’t seem too hard to make too. I see you are using your cutting board too! I can see them going fast, they must be good.
